Hey everyone! We’ve finally got some snow here in the White Mountains, and it’s beautiful! But that’s not all we’re excited about—mark your calendars for our 2025 Spring Club Weekend happening from April 25-27! We’re hosting our very first wine blending weekend just for you! This is your chance to be a part of creating Seven Birches’ next signature wine blend! Let’s get the party started on Friday night with a welcome social and then Saturday morning and afternoon we’ll have some exciting and informative sessions that will set you on the path to becoming a master wine blender! After that, you’ll roll up your sleeves and dive into some bench trials, where you’ll experiment with various ingredients to create your very own masterpiece. Together, we’ll collaborate to discover the ideal percentages for our next fantastic blend. We can’t wait to share this amazing experience with each and every one of you! We also have a fun domestic trip on March 22nd. We’ll be headed on a tour of five Long Island wineries alongside our club members. The bus will pick us up Saturday at 9:15 am @ Hilton Garden Inn, Riverhead. You’re welcome to join us for the day or even extend your stay! We know not everyone can join the international trips, so we want to offer some local travel options to make it easier for everyone to participate. Don’t forget to spread the word about our February workshops. We only have a week left of our Delectable Desserts Uncorked. If you’re on the hunt for a fun way to celebrate Valentine’s Day with your special someone, this will definitely delight their taste buds! Up next is our Blind Tasting with the Winemakers on the 18th. We’re excited to keep bringing events like this to both the public and our club members! We’ve been having a blast mixing things up, and you never know what surprise we might have in store next!

We have updated our wine club policy regarding the holding period for members’ orders. Previously, we held wines (pick up orders) until the next order processed, but this has become unsustainable due to limited space. Going forward, wines will be held for pickup at our Lincoln, NH winery for 30 days. After this period, we cannot guarantee the availability of your selected wines. However, you will always have credit on your account for your club purchase, which can be used to select wines of equal value or to modify your order at pickup. We appreciate your understanding! Production News with Gage

It has been a cold, busy few weeks here in the White Mountains. As winter continues, we’re excited to share with you the fruits of our labor. Honey and Hopped Cider is now available in our tasting room as well as in stores!
Honey Cider is one of my favorites. It has the combination of tart, somewhat sharp apple flavors with the floral, sweet notes of honey creating a beverage that is refreshing and unique. The balance of this cider took awhile to narrow down, but we are very pleased with the final product and look forward to sharing it with you. Our Hopped Cider is a fusion of two beverage worlds that can be experienced in one can. Truly delicious. The crisp, refreshing nature of the cider with the aromatic, bitter complexity of beer makes a beverage that can be enjoyed by many different palates. This balancing act is all about timing, resulting in a hard cider that is perfect for gatherings with friends and family. As we prepare for Spring, we are working on our Rose Cider. This is currently being blended and under bench trials. Soon we will have it ready for a refreshing treat after the upcoming
spring cleaning! We look forward to sharing our passion for wine with you. Until then, sip well and live well!

Long Island's North Fork Winery Tour

Presidents’ Week is almost here and to celebrate, we are pulling out all the stops.  First, we have extended tasting room hours all week long.  From February 14th through the 22nd, we will be open for tasting from 12:00 to 8:00 pm, with the store opening up for shopping early at 10:00 am!  This week is jam packed with events!  We are hosting a Blind Tasting with the Winemakers on Tuesday, February 18th at 6:00 pm.  This guided tasting will take you through each wine the way a sommelier would. Paint Your Own Pottery (and sip!) is on Wednesday the 19th at 5:30 pm and our Charcuterie Class (with tasting of course) is on Thursday the 20th at 5:00 pm.  The deadline to sign up for these two is fast approaching!  You can also visit us for Delectable Desserts Uncorked until February 22nd. Join us in the tasting room for five mini desserts paired with five different wines, curated to enhance the flavors of both dessert and wine.  Order ahead to guarantee your dessert pairing to enjoy in-store, or take the desserts and wine to-go to be enjoyed on your own with a guide for each pairing!  Links for all of these events and offers are available below.  We can’t wait to see you all.  Let there be snow.
