Production News with Nate

Nathan Maser, Wine and Cider Maker

We are in full swing here in the cellar this time of year. We received our spring harvest from Chile a few weeks ago and all the wines are just finishing up fermentation now. From the 2025 spring harvest we will be making Gusto (Cab Sauv), Shadow (Merlot), Classique (Cab Franc), Syrah, Curico (Malbec), Savanna (Sauvignon Blanc), Alto (Pinot Grigio), Jardin (Viognier), Secrets (Moscato), Kismet (a co-fermented red blend), and Wild (a white wine that has undergone a natural fermentation, with no yeast addition). Gage and I pressed all the grapes out of the wines last week and we will begin the racking process by the time you all are reading this. Racking is the process in which we pump all of the good wine into a different tanks leaving the sediment or “lees” behind. Gravity naturally pulls all the heavy unbound particulates, in the wine, to the bottom of the tank. This process acts like a natural filtration. The wine gets a little bit clearer each time we rack the liquid off the lees. We are excited to be drinking these wines with you in a year or two. The vineyard out back is now in full bloom and is looking absolutely gorgeous. Make sure to take a stroll through it next time you are visiting this summer.
