May has kicked off to an amazing start for us here at the winery. A team of 5 of us worked hard to package up all of the wine club members’ orders in just one day, taking us about 6.5 hours to complete. Hopefully, by now you’ve received your wine order and had a chance to taste the new wines selected by our winemaker!

Looking for the tasting notes? You can find them on our website to save on paper waste. A big thank you to all of you who filled out the RSVP forms for our open house Saturdays starting in June. We’re excited to show off our new space and can’t wait to see you there – it’s absolutely free to join! Please RSVP if you haven’t already. And speaking of special events, we’ve got our wine slushes coming back Memorial Day weekend! We also have some new beverages in the tasting room, including the return of our popular “Ice Out” cider and a new Strawberry cider that’s already a hit with customers. Our vineyard is looking fantastic after Nate and Paul finished pruning, and they’re working hard in the production room in anticipation of moving into our larger space soon. Ready…Set…MOVE! That’s our life right now at Seven Birches. We are all hands on deck moving everything we have across the resort, from Phase 1, and the parking lot, from the Studio. The new tasting room is looking fantastic thanks to Stephanie LaClair and Brian Walters. Paul, my second hand man, has completed cleaning up all of the construction mess in the new Production room and he and Mark have gotten all of the concrete floors sealed. We are down to the beginning of the end of our stay in the Riverwalk Resort Phase 1 and, let me tell you, we couldn’t be happier. It has been a long few months to get to this point, but now that we are looking at the light at the end of the tunnel, all of the exhaustion and stress is flowing off our shoulders. We are all extremely excited to show our Club Family the new tasting room and Birch Room. This upcoming Saturday may just be my last set of tours in Production Phase 1; so if you are in the area come book a spot on the tour to get the full experience of where we came from and where we are going to. I wanted to give a huge shout out to the whole Seven Birches team working together to get this move completed. Even though we are in the middle of this huge move, production cannot stop. I have just finished up the fermentation of my “last” batch of cider for the season. This cider will get transferred into large ICB totes and moved over into the new Production room, then transferred back into tanks. I have one cider left to keg to have a full complement of all of our different kinds of cider for the summer. The last cider or wine that will be bottled/kegged is the Rhythm Hopped Cider. We ended up deciding to use Amarillo hops to make this cider. A big shout out to the Brewer and Owner of One Love, Micheal Snyder,  for helping me get this cider off the ground. Finally, Mark and I are very excited to share our oldest aged wine to date. It is a Cabernet Sauvignon; the grapes came from the 2021 California Harvest. This wine has been sitting in brand new French oak barrels that are a Medium (+) on the oak toast scale. We have made this wine specifically for the Grand Opening Event for Phase 2 of the Riverwalk Resort. It will be released at the opening event first, but don’t worry I made enough that it will eventually find its way into the new Seven Birches Tasting Room! Tasting Room Supervisor

We are very excited to be moving!  Our target opening date is May 22nd and we are working hard to get everything ready for you.  The new Birch Room is looking cozy, and perfect for hosting events and welcoming new and current members to our winery this summer.

Our gift shop has also expanded to include even more gifts. We now have stuffies, sweets, and books for the kids. Our seating has been upgraded; our bar and our lighting, too.  There is so much to love about this new space that I cannot list it all here and we couldn’t have done it without you.  Don’t forget to join us this upcoming Memorial Day for our kick off of summer and of course the return of our beloved wine slushies! Thank you all for being on this journey with us.  We cannot wait to welcome you into our dream home.
