Hi everyone! Fall is finally here and we have been busy busy busy at Seven Birches. Between harvesting the grapes from our own vineyard to crushing grapes that came in from Washington and California, we are now bottling wine and gearing up for the Fall Release! You all should have received what wines you will be getting as part of your Traditional Wine Club membership! As a reminder, your credit cards will be charged on October 22nd, so please make sure your payment is up to date! If you’re in our subscription club, this does not apply to you. 🙂 Those of you attending the Fall CRUSH weekend, you can pick up your wine then! If you are having your wines SHIPPED, we will begin shipping on November 6th. With the transition to a new space, our production timeline took a bit of a hit and we are running low on wines. This means we are unable to accommodate any substitutions for this specific release. We understand this may be disappointing, but if you would like to wait until you have access to the new wines, please feel free to contact club@sevenbirches.com, and I will ensure you receive what you are looking for. Not to worry though, production is now at full capacity and we will catch up and allow for more order editing in the future. If you are looking for more control over the wine you receive, now is a great time to switch to our subscription club! Also, some fun news and new events coming up! Production News with Nate

Wow, is there a lot going on in the cellar right now. We have harvested all the grapes we were able to from our own vineyard out back. I am pleased to report all the fruit looked great, I was really happy with the crop this year. Within a few days of finishing picking and crushing our own grapes our largest delivery from California and Washington State came in; totaling 14 tons of fruit! We were able to crush all 14 tons in one day with help from our dedicated tasting room staff; Brian, Kamila, Martinez, Joce and her Husband Matt. In addition we had a few of our wine club members Ashley and David come in and help us harvest out back and crush the grapes from out west. Thank you to all who helped make this year’s harvest into a smooth success. Be sure to buy your ticket for the November event; we will have grapes that you get to crush with your very own feet (don’t worry, these won’t be made into wine). By the time you are sitting down to read this newsletter all of the estate grapes and the west coast grapes will have been pressed. This process involves pumping the juice, grapes, and seeds (called the must) into the press to remove the juice from the skins and seeds. The press essentially acts like a huge strainer letting most of the juice escape, leaving the grapes stuck inside the cage. This flow of juice is called “Free Run Wine.” It is the first time we refer to the liquid as “wine” and not “must.” Once there is no longer room in the press for any more “must” we put the lid on the press and start filling the inside bladder with water. This bladder ends up “pressing” every last little bit of juice out of the skins. Fun fact: there are some wineries that keep the “free run” and “pressed fractions” separate, potentially making two separate wines from the same grapes. We are not one of those wineries; we blend our pressed fraction and free run together.  We love the fall: newly picked grapes, fresh cider, foliage, cool nights and warm sunny days. BRING ON THE FALL. Now that the grapes have all been pressed, creating some much needed tank space, it’s time for #CIDERSEASON. We have already brought in our first 1,000 gallons of fresh sweet cider directly from the orchard. About 200 gallons of this cider will be used to back sweeten our Blueberry cider and a new batch of Rhythm cider that will be our new batches put into 16 oz cans.  The Blueberry cider will be our new release in cans so keep your eyes out for it. Finally I would like to introduce the newest member to the Cellar of Seven Birches Winery, Gage Gibeault. Gage has had years of industry experience working for wineries down in Connecticut. He has joined the team right before harvest started and has been a huge asset immediately to the team. Please, next time you are up in Lincoln visiting please give our new Assistant Winemaker a big pat on the back and a big Seven Birches “welcome to the family.” Having Gage on the team with me will mean that we can keep bringing exceptional beverages to you while always striving to perfect our craft even more.
