This spring club weekend event is the first of its kind. You, our best customers, are going to be blending Seven Birches’ next wine release. Starting with some warm-up educational sessions leading you down the path of becoming a master wine blender, you will end up conducting bench trials to determine what components work in creating a masterpiece and which don’t. Collectively as a group, you will be calculating the exact percentages of wines in the next blend.
Starting on Friday evening with a gathering in the Seven Birches Winery tasting room for an opening social, you’ll instantly get into the groove with tasting some of the latest releases.
Then, Saturday morning, head outside for an optional vineyard walk & talk with the vineyard managers. Learn about the vines we have planted, how they are trained to grow, and why we care so much about the fruit that goes into our wines. After the vineyard, head back inside for a group session with sommelier, Missa Capozzo, who is going to teach you some wine basics; components of wine, how to taste, pairing with food, and more. After that, the group will split into 2 and half will be heading to the winery cellar to start blending with Nathan, the Seven Birches Winemaker, while the other half will be with Mark, Seven Birches Winery owner conducting a blind tasting. Then, the groups switch. The goal for the day: Make a delectable wine blend to be bottled and sold in the near future. We’ve scheduled in some “hang time” for club members apres-blending.
Sunday morning, meet-up one last time for Pomosa, make any final purchases you wish, and pick up your spring release (traditional club members).

9am – 10:00 Vineyard Walk & Talk (optional) – All Attendees Welcome.
10:15 – 11:30 Tasting Room with Sommelier, Missa Capozzo
- A fun and educational workshop on tasting wine, pairing wine with food, what to look for, and understanding terminology. Includes a wine pairing tasting flight.
Lunch, 11:30 – 1pm On Own
1pm – 2:15 – Group Splits in 2
- Group A – In the Birch Room. Blind Tasting – Understanding components of wine.
- Group B – In the Cellar. Tasting/Blending Activity – Making the blend.
2:30 – 3:45 – Group switches activity

4pm – on Birch Room – Hang Time.
Sunday, 4/27 @ 10am – Pomosa!
