Production News with Nate

Snow! What beautiful snow we have this year. I almost can’t believe it; if you love your winter sports, this is the year to get up here and enjoy them! The skiing conditions are absolutely stunning, just like our line up on the current tasting menu. I absolutely love all of our current vintage wines and probably by time this gets posted, our 2025 Pinot Grigio will have been released to you all in the wine club.
I’m ridiculously happy with this one. Ff you’re a Pinot Grigio lover, definitely add an extra bottle of this one to your subscriptions.
The 2024 Merlot is also up there for one of my favorites on this current menu. I find it the perfect casual drinking wine; I keep finding myself opening a bottle of this one while relaxing with a book in front of my pellet stove.
For our cider lovers out there we have a few things coming up. We will be making a new and improved blood orange cider that, personally, I’m almost giddy about. We are planning on bringing back the maple cider this March. I also have a few ideas of new ciders knocking around my head. I’ll be getting these experiments started soon and honestly can’t wait. I’m hoping to put the experiments into kegs so you all can try them in the tasting room and let us know what you think about them. The ones that we hear the best feedback from will be scaled up to a full batch! Joce or Mark will let you all know when these are going to drop so you don’t miss out on getting your taste and vote!
In the cellar, Gage and I are already looking towards spring. We will be bottling a bunch of wine early spring to get ready for the spring harvest from the southern hemisphere.
Mark and I have been bouncing some ideas of new wines and blends off of each other. I think we are gonna have some new things in the pipeline starting this spring, so I’ll keep you updated on that. Gage and I are also trying a new step in the aging process for a couple of our white wines. This process is called “sur lie aging”. I mentioned that process in the last update, and I’ll get a little more into what that is as these wines get closer to being released. We are also producing a new Ice Apple Wine! It’s been a few years since we made this and I’m stoked to get this one back into production. If you come up for a visit between now and late winter you can see the tote of apple cider outside the tasting room. To make the Ice Apple wine we put the juice through a process called cryoconcentration. Hoping this year will be even better than the last vintage we did. Keep your eyes out for this one dropping this upcoming fall to winter. As always, be well, be safe, enjoy something you have never tried before, and make sure to stop by and say hello next time you’re in the area. Enjoy the pow!
