Wine & Chocolate Pairing

Wine and chocolate are the perfect pairing because each enhances the other’s depth, aroma, and complexity when thoughtfully matched.  The richness of chocolate softens tannins in wine, while the wine’s acidity and fruit notes lift chocolate’s sweetness and intensity.

Dark Chocolate, Lemon Cream paired with Savanna (Sauvignon Blanc)

The acidity of the Savanna is able to match the acidity provided by the lemon to create a smooth citrus treat.

  1. Eat a small bite of the lemon cream chocolate.
  2. Take a small sip of the Savanna and swallow it.
  3. Take another bite of the chocolate, with a sip of Savanna at the same time. Swirl both in your mouth.
Did you taste the elevated flavors? The strong lemon flavor of the chocolate is enhanced by the slight sweetness and alcohol of the wine.

Dark Chocolate, Sea Salt & Caramel paired with Merlot

The sea salt adds to the experience by magnifying the red berry fruit flavors, making it seem as if the fruit was part of the chocolate.

  1. Smell the red wine and note the intense red berry aromas (strawberry, raspberry, red currant).
  2. Taste a bite of the chocolate caramel & immediately sip the wine with it.
Did you sense the fruity flavors of the Merlot as they persist through the intensity of the dark chocolate with caramel, leaving you with a wonderfully sweet, red wine taste? The sea salt adds to the experience by magnifying the red berry fruit flavors, making it seem as if the fruit was part of the chocolate.

Dark Chocolate, Cherry Cordial paired with Pinot Noir

  1. Eat the entire cordial. Make note of the sweet cherry flavors and the smooth texture of the chocolate. Let the intense cherry flavors of the chocolate fade after a minute, before taking a sip of the wine.
  2. Taste the Pinot Noir.
Did you get the chocolate intensity back? The dark cherry, smooth tannins, and light acidity of the Pinot Noir pick up the remaining chocolate flavors to bring the chocolate right back into your mouth, even though you ate the chocolate over a minute or two ago.

Dark Cocoa, Marshmallow paired with Blueberry Wine

  1. Taste the Blueberry wine FIRST. Note how the Blueberry wine is sweet, fruity, but also has a savory note (umami flavor) to it.
  2. Taste a small bite of the chocolate.  It tastes just like hot chocolate in candy form.
  3. Now taste both together.
Did you notice how the earlier savory flavor of the Blueberry wine disappears, leaving you only with the perfect sweet flavor of blueberry chocolate?

Milk Chocolate, Strawberry Cheesecake paired with Secrets (Moscato)

  1. Smell the Secrets (Moscato).  Get a sense for the sweet, floral aromas of the wine.
  2. Take a small bite of the chocolate. At first, you note a strong Strawberry component of the chocolate, hence the name “Strawberry Cheesecake”. Let that strawberry flavor sink in and concentrate on the flavor.
  3. Now take another bite of chocolate and while in your mouth a small sip of the wine.  Swirl around in your mouth and swallow both.
Now, what do you taste?  We taste bubble gum!  The floral nature of the Moscato, along with its acidity have changed the flavor of the strawberry to a new flavor, just like magic!
